Roasted Pork Chops, Celeriac and Apple Slaw, Chimichurri Sauce
Tender pork chops are perfectly roasted, complemented by a crisp, tangy slaw, and finished with a zesty chimichurri sauce for a burst of fresh flavour. This dish offers a delightful mix of textures and tastes, perfect for a satisfying family meal.

Ingredients
4 x Pork loin chops
75ml Cold pressed rapeseed oil
1 x Celeriac (medium sized)
2 x Red apples
100g Mayonnaise
10g English mustard
Salt
Milled pepper
Chimichurri Sauce Ingredients
ยฝ Bunch curly parsley – leaves
ยฝ Bunch fresh oregano – leaves
2 x Garlic cloves – peeled
1 x Banana shallot – peeled
50ml Red wine vinegar
200ml Cold pressed rapeseed oil
1 x Red chilli
Top tip
If you donโt have a food processor, you can use these alternatives:
Pestle and mortar: Excellent for grinding spices, herbs, and making pastes.
Knife and cutting board: Finely chop, dice, and mince the ingredients.
Method
Cooking the Pork Loin Chops
- Heat a thick bottom cast iron frying pan to a medium heat.
- Season the pork loin chops on either side evenly with salt and ground white pepper.
- Add the cold pressed rapeseed oil to the frying pan and add the pork chops.
- Seal the pork chops on each side in the frying pan and then transfer the pan into a preheated oven, (190c/gas mark 5).
- Cook the pork steaks for 4 – 5 minutes and then turn them over and continue cooking for a further 4 – 5 minutes until golden brown on both sides.
- Remove the pork steaks from the oven and leave to rest on a plate or tray until needed.
To make the Celeriac and Apple Slaw
- Place the celeriac on a chopping board and cut the top and bottom off with a sharp knife.
- Cut around the celeriac removing the outer skin and discard.
- Cut the celeriac into slices and then into matchsticks and place in a bowl.
- Do exactly the same with the apple, but leave the skin on and add to the celeriac.
- In a separate bowl mix the mayonnaise with the English mustard and then add to the celeriac and apple matchsticks.
- Mix thoroughly and season with salt and pepper to taste.
To make the Chimichurri Sauce
- Place all the ingredients in a food processor and blend until a chunky style sauce is formed.
- Season with salt and pepper.
To Serve
- Place the cooked pork loin chops on a large serving plate and drizzle with a little of the chimichurri sauce.
- Place the celeriac and apple slaw in a separate serving bowl.
An addition of boiled Jersey Royal new potatoes could be served alongside.
