Carrot and Apple Bircher Overnight Oats

Start your family’s day right with this Carrot and Apple Bircher Overnight Oats. This delicious and nutritious recipe combines rolled oats, grated carrots, and crisp apples, soaked in yogurt overnight for a creamy texture. Naturally sweetened, it’s an appetising and healthy breakfast option.

Overnight oats

Ingredients

200g Jumbo oats

200g Carrots Red Tractor icon

1 Red apple Red Tractor icon

500ml Greek style yoghurt Red Tractor icon

200ml Semi skimmed milk Red Tractor icon

75g Clear honey


40g Pumpkin seeds

40g Sunflower seeds


Method

  1. Place the oats in a large bowl.
  2. Peel and grate the carrots and add to the oats.
  3. Grate the apple with the skin on (excluding the core) and add to the oat mixture.
  4. Mix in the Greek style yoghurt and the clear honey
  5. Cover with cling film and place in the fridge overnight.
  6. When ready to serve, remove from the fridge and mix in the milk.

  1. Top with the pumpkin and sunflower seeds.
